How to make Espresso like a Barista – Vol 5: The pour

The pour

For some reason, this is my favourite part about making espresso!  The perfect pour to me is when a Crema-brown stream slowly pours out of the group and down the side of the cup. 

Some say that it should look like a string or piece of spaghetti hanging from the group into the cup.  Sometimes bubbles will pour out, this is a sign that the coffee is very fresh.
